Focusing on my Health:

I’ve been trying to change the way I eat for a long time. But I’m a foodie and anything that tastes good will go into my mouth. What I have decided to do is try going without red meat several days of the week. This schedule has worked out well for me, I’m starting to lose weight again and I’m feeling less bloated.  I’ve decided to share some of my best recipes for Meatless Monday’s with you. Thai Curry Chickpeas with Basmati Rice

Instructions
  1. In a non-stick medium heated pan add avocado oil and the chopped shallots.
  2. After browning for 1 to 2 minutes add the Russet potatoes to the pan and stir for several minutes.
  3. Add the chickpeas and Thai coconut milk to the pan and bring to a boil.
  4. Add the curry powder and turmeric powder to the pan with salt and pepper.
  5. Continue to stir the pan and add the chopped jalapenos turning the heat down low.
  6. Once your potatoes are tender, serve the curry dish over a bowl of Basmati rice.
